Sweet Potato Ragout the First!

Ingredients

  • 3 big sweet potatoes
  • 250g Mushrooms
  • 3 big Carrots
  • 500g Cherry tomatoes
  • 2 tsp Herbs of provence
  • 2 tsp oregano
  • 1 tsp Thyme (optional)
  • 1 tsp paprika powder (optional)

Instruction

Not without a reason this is called sweet potato Ragout the First….. There are probably going to follow some more…… because hell… I’m in love with it….

First peel the sweet potatoes and cube them into generous sizes, then make sure to steam them in a pot of water for about 10 minutes, so they aren’t that soft.

Furthermore steam the cherry tomatoes in a big pot of water for 5 minutes, before you blend them to a smooth sauce. Then slice the carrots into slices, after you peeled them and the same with the mushrooms.

Now for the part we’ve all waited for, combine all the ingredients and spices/herbs together in the big pot, we had already cooked the cherry tomatoes in, and let it simmer on medium heat for 10 to 15 more minutes.

….. Get yourself a large bowl to serve and enjoy!
