Pumpkin base bean stew

Ingredients

  • 1 massive bug Hokkaido pumpkin
  • 1 can Kidney beans
  • 1 can White beans
  • 1 can Chickpeas
  • 1 bunch fresh chopped up parsley for decoration

Instructions

Aaaaaand reeeaaadddyyy, steeeeaaadddyyy, GOO..

Cut the pumpkin in half, remove the seeds, cut it into yummy, delicious, fruity… Ok… Cubes and steam in a pot of water for 10 minutes.

Now in the meantime… Go, go, go,….. drain and wash all the beans…

Lastly drain the pipkin from the water, fill around 200ml fresh one again ok and puree everything with a handmixer to a smooth cream…(like always if you want it creamier or thicker – more or less water!)

Aaaaaand mix the beans in, to let it at first shortly boil up while constantly stiring it and then simmer on low heat for at least 15 minutes…

Aaaaaaaaaannnnnnddddd READY… *takes a biiig breath *

Oh yeah, and once ready top it off with some fresh chopped parsley…
