Potato Schmarrn – Broc Curry

Ingredients

For the Potato patties :

  • 800g Potatoes

For the rest of the Curry :

  • 200ml Coconut milk (preferable one whole can à 400ml)
  • 200g Broccoli
  • 2 tsp Curry
  • 1 tsp Tumeric

Yes, this is……. Err I wanted to say something else, this came into my mind and I’m so happy about it, because those potato patties in Curry is probably the best thing ever…

Speaking about those, please preheat the oven to 220 C ° and already start shredding them into tiny shreds,…. I know it takes long and I know it’s demanding, but it’s worth it..

Once you’re ready, get yourself a parchment paper and start forming small patties out of the shreds, which you’ll of course, so then place onto the paper and bake them for 15 minutes on each side..

This should probably make a lot of patties , but you don’t have to use up all of them for the curry, you can store some of them for week in the refrigerator, and use them for other dishes…

Anyways, once you’re done that, cut the Broccoli, after the first 15 minutes, into tiny florets and steam them in a pot of water..

And once everything is ready, both potato patties and Broccoli, put the spices and Coconut milk into a pot.

Preheat it in there and bring it to boil, but don’t forget to stir in the spices..

Once some bubbles are coming up, mix in the Broccoli and turn the heat to medium, to let it simmer for 5 to 8 minutes.

Then take some of the patties and tear them roughly apart into medium pieces, before you stir them in the last 2 to 3 minutes in, as well..

Let these few minutes pass by, too and then it’s ready to be served!
